Ingredients
- 500 g (1.1 lb) chicken breast
- 1 bag (about 400 g / 14 oz) frozen mixed vegetables
- 5 button mushrooms, sliced
- 300 ml (1 1/4 cups) 10% light cream
- 100 g (3.5 oz) cheese, grated
- 1 bunch fresh herbs (parsley or dill), chopped
- Salt and black pepper to taste
Instructions
- Preheat the oven to 180°C (350°F). Lightly pound and slice the chicken breast.
- In a baking dish, layer the mixed vegetables, chicken slices and mushrooms, seasoning each layer with salt and pepper.
- Pour the cream over everything and top with the grated cheese.
- Bake for 40 minutes until golden and bubbling. Garnish with fresh herbs before serving.
Tips
- Pound the chicken to an even thickness so every piece cooks through in the same time.
- Season each layer as you build the casserole — it makes a big difference in the final flavor.
- Let the casserole rest 5 minutes after baking so the cream settles. For safe chicken cooking guidance, see the food safety resources at USDA, and Serious Eats has great casserole technique tips.
