Ingredients
- 2 tbsp semolina
- 400 g (14 oz) loose cottage cheese (5-9%)
- 1 ripe banana
- 2 eggs
- Apricot, or any fruit or berries to taste
Instructions
- Blend the cottage cheese, eggs, banana, and semolina with an immersion blender until smooth.
- Finely chop the apricot and fold into the mixture with a spoon.
- Pour into a 20 cm (8-inch) form (if your form is wider, scale up, or it will turn out flat).
- Bake at 190C (375F) for 35-40 minutes.
- Cool in the form, then chill a few hours – or eat it warm.
Tips
- Use a very ripe banana for the best natural sweetness and soft texture.
- Let the bake cool in the form so it sets cleanly before slicing.
