Ingredients

  • 1 kg (2.2 lb) potatoes
  • 20 g (1.5 tbsp) butter
  • 350 ml (1 1/2 cups) milk
  • 1.5 kg (3.3 lb) beef
  • 15 g (1 tbsp) butter
  • 1 onion
  • 300 g (1 1/4 cups) sour cream
  • 150 g (2/3 cup) tomato sauce
  • 30 g (2.5 tbsp) flour

Instructions

  1. Boil the potatoes; add the butter and milk and blend into a mash.
  2. Slice the beef and sear on high heat. Slice the onion into half-rings and fry in butter until golden.
  3. Add a cup of water to the beef and onion; simmer 5 minutes; season with salt and pepper.
  4. Stir in the flour, then the sour cream and tomato sauce; mix well.
  5. Simmer covered on low heat 10-12 minutes, stirring occasionally.
  6. Serve over the mashed potatoes.

Tips

  • Sear the beef in batches so it browns properly instead of steaming.
  • Use room-temperature sour cream and stir it in gently to keep the sauce smooth.
  • For safe cooking temperatures for beef, check the guidance at USDA.
