Ingredients
- 400 g (14 oz) salmon fillet
- 1 potato
- 300 g (10.5 oz) broccoli
- 1 tsp lemon juice
- Salt and black pepper to taste
- Vegetable oil for frying
Instructions
- Dice the salmon into small cubes. Boil the potato, mash it, and mix in the lemon juice.
- Blanch the broccoli in boiling salted water for 5 minutes, chop finely, and add to the salmon with the mashed potato and spices. Mix well.
- Heat oil in a skillet. With wet hands, shape patties and fry over medium heat until golden on both sides.
Tips
- Dice the salmon while it is still slightly chilled — firm flesh is much easier to cut into neat, even cubes.
- Do not overcrowd the skillet; fry the patties in batches so they sear instead of steaming, which keeps the crust crisp and golden.
