Ingredients
For the dough:
- 300 ml (1 1/4 cups) warm milk
- 480-500 g (4 cups) flour
- 1 tbsp yeast
- 3-4 tbsp sugar
- 2 tbsp honey
- 1/2 tsp salt
- 50 ml (1/4 cup) vegetable oil
For the filling:
- 50 g (3 tbsp) butter, softened
- 360 g (1 1/2 cups) cottage cheese
- 2-3 tbsp sour cream
- 2-3 tbsp sugar
- Raisins or dried apricots
- 1 egg yolk, for brushing
Instructions
- For the dough, combine all ingredients, knead into a soft ball, and proof in a warm place for 1 hour.
- Roll the risen dough 0.7-1 cm thick and spread with soft butter.
- For the filling, mix the cottage cheese, sugar, and raisins (or apricots). Spread evenly, roll up, seal the edge, and cut into 2.5-3 cm slices. Dip the bottom of each bun in flour, shape by hand, and place on parchment. Brush with beaten yolk.
- Bake at 170°C (340°F) for about 30 minutes (know your oven).
Tips
- Use warm, not hot, milk so the yeast activates well and the dough rises into a soft, fluffy crumb.
- Do not overbake — the buns should stay pale gold and soft, so start checking a few minutes before the end.
