Warm cottage cheese cinnamon rolls with cream cheese glaze, fresh from the oven

Ingredients

For the dough:

  • 180 g (3/4 cup) block cottage cheese
  • 2 eggs
  • 5-6 g sugar substitute
  • 1 packet vanilla
  • 200 g flour (100 g rice + 100 g whole wheat)
  • 10 g (2 tsp) baking powder

For the filling:

  • 2 tbsp honey (optional)
  • 2-3 tbsp erythritol
  • 1 tsp cinnamon

For the glaze:

  • 100 g (1/3 cup) cream cheese
  • 100 g (1/3 cup) soft cottage cheese or sour cream
  • Vanilla and sugar substitute to taste

Instructions

  1. Blend the eggs, cottage cheese, vanilla, and sweetener until smooth. Add the flour and baking powder; knead a soft dough. Rest in a bag 10-15 minutes.
  2. For the filling, simply combine all ingredients.
  3. Roll the dough into a rectangle, spread with filling, roll up, and cut into buns.
  4. Bake on parchment at 180°C (350°F) for about 30 minutes.
  5. For the glaze, mix the cream cheese, cottage cheese, vanilla, and sweetener. Brush over the hot buns.

Tips

  • Do not overwork the dough — a soft, slightly tacky dough bakes up the most tender rolls.
  • Glaze the buns while they are hot, so the topping melts gently into every swirl.
  • Serve warm for the best texture, and store leftovers in an airtight container for up to two days.
