Ingredients

  • 2 chicken breasts
  • 4 slices ham
  • 4 slices cheese
  • 1 egg
  • 1-2 tbsp milk
  • Breadcrumbs
  • Salt and spices to taste
  • Toothpicks or skewers

Instructions

  1. Butterfly each breast open like a book and pound flat. Season with salt and spices. Lay on ham and cheese slices.
  2. Roll up tightly, dip in the egg-milk mixture, then coat in breadcrumbs. Secure with skewers so nothing escapes.
  3. Bake at 180°C (350°F) for about 35 minutes until golden.

Tips

  • Pound the chicken evenly so it cooks through at the same rate.
  • Chill the rolled chicken briefly before coating to help it hold its shape, and find more ideas on Allrecipes and Serious Eats.
  • Let it rest a few minutes before slicing so the cheese stays inside.
