Ingredients

  • 200 g (about 6) egg whites, room temperature
  • 300 g (2 1/2 cups) powdered sugar
  • 1 tsp lemon juice
  • 250 ml (1 cup) heavy cream (33%)
  • 250 g (1 cup) cream cheese
  • 30 g (2 tbsp) sugar
  • Fresh berries

Instructions

  1. Whip the room-temperature whites with powdered sugar and lemon juice for 10-15 minutes until thick and glossy. Spread evenly on a baking sheet and bake at 150°C (300°F) for 30-40 minutes.
  2. While the meringue cools, whip the cream with the cream cheese and sugar until smooth.
  3. Spread the cooled meringue with cream, scatter with berries, and roll up (crust-side down). Chill a couple of hours to set.

Tips

  • Make sure the bowl is clean and grease-free so the whites whip to full volume.
  • Roll the meringue gently while it is still slightly flexible to avoid cracking, and see more baking tips on Allrecipes and Serious Eats.
  • Chill before slicing for the neatest, cleanest slices.
