Oven-baked lula kebabs on wooden skewers, garnished with fresh herbs

Ingredients

  • 600-700 g (1.3-1.5 lb) ground meat
  • 2 sweet peppers (or hot, if you dare)
  • Fresh herbs (e.g. cilantro)
  • 2 garlic cloves
  • Salt, pepper, and favorite spices
  • 100 ml (1/3 cup) water

Instructions

  1. Mince the peppers, garlic, and herbs (a blender works). Combine with the meat, spices, and water.
  2. Beat the mince a little for better texture, then shape into lula kebabs — long or patty-style.
  3. For a fun presentation, thread onto wooden skewers. For even strips, use sushi sticks as a mold. Bake at 200°C (400°F) for 30-35 minutes.

Tips

  • Shape the kebabs with wet hands so the mince does not stick, and chill it briefly if it feels too soft to hold its shape.
  • Do not overbake — take the kebabs out as soon as they are cooked through and lightly golden, then rest them for a few minutes before serving.
  • Serve with flatbread, pickled onions and a fresh salad; for more ground-meat ideas, see Allrecipes.
