Ingredients
- For the filling: 300 g (10.5 oz) cottage cheese
- 30 g (2.5 tbsp) sugar
- 1 tbsp starch
- 1 egg
- For the batter: 4 eggs
- 150 g (3/4 cup) sugar
- 160 g (1 1/3 cups) flour
- 100 ml (1/3 cup + 1 tbsp) vegetable oil
- 2 tbsp cocoa
- 2 tsp baking powder
Instructions
- Filling: whisk or blend all filling ingredients.
- Batter: beat the eggs with the sugar, add the oil and mix. Combine the dry ingredients separately, fold into the batter with a spatula and pour into the pan.
- Pipe the filling in stripes over the batter.
- Bake at 160-170°C (320-340°F) for 30-40 minutes (know your oven).
Tips
- Blend the cottage cheese until smooth for the prettiest, silkiest swirl.
- Do not overmix once the flour goes in, or the cake can turn dense. For more chocolate baking guidance, visit Serious Eats.
- Check with a toothpick from 30 minutes: it should come out with moist crumbs, not wet batter.
