Ingredients
- 400 g (14 oz) ground meat
- 1 onion, chopped
- 180 g (6 oz) crushed tomatoes
- 350-400 ml (1 1/2 cups) water
- 250 g (9 oz) dry pasta
- 100 g (3.5 oz) cheese, grated
- Fresh herbs
- Hot sauce (e.g. sriracha)
- Salt, sugar, paprika, basil, oregano
Instructions
- Sauté the onion in a drop of oil until soft. Add the ground meat and spices; cook until half-done.
- Pour in the crushed tomatoes and water to make a meaty sauce; nestle in the dry pasta so it is fully covered. Taste and adjust — add hot sauce and don’t skip the sugar, tomatoes are acidic.
- Cover and cook 10 minutes. Sprinkle with cheese and herbs; rest 2 minutes.
Tips
- Stir once or twice while the pasta cooks so it does not stick together.
- Add the hot sauce a little at a time so the heat suits your taste. For more one-pan pasta ideas, visit Serious Eats.
- Let the pasta rest before serving so the sauce thickens and clings to every piece.
