This crunchy banana granola is the kind of breakfast that makes slow mornings feel special: sweet, toasty oats, mixed nuts, and a hint of vanilla, all baked until golden. It pairs beautifully with yogurt or milk, and it is just as good sprinkled over Banana Oat Pancakes or enjoyed on its own as a wholesome snack. Ingredients
- 80 g (2/3 cup) mixed nuts
- 100 g (1 cup) rolled oats
- 3 tsp coconut oil
- 3 tsp maple syrup
- 1 ripe banana
- 1/4 tsp vanilla sugar
- Pinch of salt
Instructions
- Chop the nuts (not too fine) in a blender. Add the oats and salt; mix.
- In another bowl, mash the banana with a fork; stir in the vanilla sugar, maple syrup and coconut oil.
- Combine wet and dry, spread on a baking sheet and bake at 180°C (350°F) for 25-30 minutes.
- The granola should turn out crunchy and crumbly.
Tips
- Stir the granola halfway through baking so it browns evenly and does not catch at the edges.
- Let it cool completely on the tray before breaking it up — it crisps as it cools.
- Store in an airtight jar for up to two weeks, and check Allrecipes for more baked breakfast inspiration.
