Ingredients
- 200 g (7 oz) cottage cheese
- 2 eggs
- 3 heaped tbsp semolina
- 1/2 cup milk
- Salt and stevia to taste
- Sour cream for serving
Instructions
- Mix the semolina with the milk; rest 10 minutes to swell.
- Beat the eggs with the stevia; add the cottage cheese, salt and swollen semolina. Mix (a quick blender pulse helps) and pour into a greased dish.
- Bake at 180-200°C (350-400°F) for 40 minutes. Don’t open the oven while it bakes or it will fall. Serve with sour cream.
Tips
- Let the semolina soak the full 10 minutes for the fluffiest texture.
- Resist peeking in the oven — the bake needs steady heat to stay tall and airy.
