Potato and mushroom gratin with melted cheese and golden top

Ingredients

  • 600 g (1.3 lb) potatoes, thinly sliced
  • 150 g (5 oz) onion, chopped
  • 400 g (14 oz) mushrooms, sliced
  • 250 ml (1 cup) cream (10-20%)
  • 150 ml (2/3 cup) water
  • 150 g (5 oz) cheese, grated
  • Salt, pepper and spices

Instructions

  1. Arrange the potato slices in a dish; add the water, salt and pepper. Bake at 180°C (350°F) for 50 minutes.
  2. Sauté the onion until soft; add the mushrooms and cook 6-7 minutes together.
  3. Lower the heat — add the cream, salt, pepper and spices; simmer 2-3 minutes until thickened.
  4. Spoon the mushroom mixture over the potatoes and top with cheese.
  5. Bake 10 more minutes at 180°C (350°F).

Tips

  • Slice the potatoes as thinly as you can so they cook through evenly.
  • Let the gratin rest a few minutes before serving so the sauce settles.
