Chocolate cottage cheese mousse dessert in a glass, topped with a glossy chocolate glaze

Ingredients

  • 9 g instant gelatin + 80 g water
  • 15 g (2 tbsp) cocoa powder
  • 300 g (10.5 oz) soft cottage cheese
  • Sweetener to taste
  • Optional glaze: 15 g sugar-free dark chocolate (72%) + 15 g milk

Instructions

  1. Add the water to the gelatin and heat until dissolved (do not boil). Stir the cocoa into the hot gelatin so it blooms into a rich chocolate flavor.
  2. Blend the room-temperature cottage cheese with the cocoa-gelatin mixture. Pour into a mold and chill until set.
  3. Optionally glaze with melted chocolate stirred with milk before serving.

Tips

  • Use room-temperature cottage cheese so the mousse blends completely smooth.
  • Never boil the gelatin, or it may lose its setting power.
