Ingredients
- 150 g (10 tbsp) butter, softened
- 2-3 tbsp sugar
- 1/2 tsp salt
- 1 egg
- 125 g (4.5 oz) cottage cheese
- 200-250 g (1 2/3-2 cups) flour
- 1 tsp baking powder
- Apricots (or any fruit), sliced
Instructions
- Rub the soft butter with the sugar and salt; beat in the egg, add the cottage cheese and mix well.
- Sift in the flour with the baking powder; knead a soft dough.
- Chill the dough 30 minutes.
- Roll out on parchment.
- Arrange the fruit, sprinkle generously with sugar, fold up the edges and bake at 180°C (350°F) for 25-30 minutes.
Tips
- Chill the dough well so the crust stays tender and holds its shape.
- Do not overload the center with fruit, or the galette may turn soggy.
- Serve warm with a dusting of sugar or a spoonful of cream. For more fruit baking ideas, see Allrecipes and Serious Eats.
