These Cottage Cheese Bagels are soft, golden and packed with protein — a brilliant quick breakfast that feels like a bakery treat without the fuss. With just a handful of ingredients, you can shape, seed and bake them in under half an hour. Fill them with smoked fish, turkey or fresh vegetables for a breakfast that keeps you full all morning.

Ingredients
- Makes 4: 360 g (12.5 oz) cottage cheese (5%)
- 1 egg + 1 white
- 4 tbsp wheat flour
- Salt
- Plus 1 yolk for brushing and seeds for topping
Instructions
- Mix everything, shape into bagels (donuts), brush with the remaining yolk and sprinkle with seeds.
- Bake at 180°C (350°F) for 25-30 minutes until golden. Fill with anything — fish, turkey, vegetables.
Tips
- Use well-drained cottage cheese so the dough holds its shape; if it feels sticky, add a spoonful more flour. For another cottage cheese breakfast, try the Cloud-Light Baked Cottage Cheese Casserole.
- Brush generously with yolk for a deep golden shine, and try sesame, poppy or sunflower seeds on top. The Chocolate-Glazed Cottage Cheese Bars are another cottage cheese favourite.
