Ingredients
- 200 g (2 cups) rolled oats
- 2 apples, quartered (no need to peel if blended)
- 3 eggs
- 1 tsp baking powder
- 100 g (3.5 oz / about 2/3 cup) mixed nuts and raisins (the author used a store nut mix)
Instructions
- Blend the oats, apples, eggs, and baking powder until smooth.
- Pour into a prepared baking pan.
- Sprinkle the nut-and-raisin mix over the top.
- Bake at 180 C (350 F) for about 40 minutes, until set and golden.
- Cool before slicing — it keeps you full for hours.
Tips
- Blend until completely smooth for a cake-like crumb, or leave it slightly coarse for a heartier bite.
- Line the pan with parchment so the cake lifts out cleanly after cooling.
- Store slices in the fridge for up to 4 days and reheat gently for a quick breakfast.
