- 1 tsp baking powder
- 100 g (1/2 cup) sugar
- 1/4 tsp salt
- 70 ml (1/4 cup + 1 tbsp) milk
- 1 egg
- 30 g (2 tbsp) chocolate chips
- Vanilla, to taste
- 60 g (1/4 cup) butter
Instructions
- Cream the butter with the sugar (all ingredients at room temperature), then add the egg, milk, salt and vanilla.
- Sift in the flour and baking powder, mix the batter and fold in the chocolate (or nuts, dried fruit, etc.).
- Spoon into muffin cups and bake at 180°C (350°F) for 30 minutes – keep an eye on your oven.
Tips
- Use room-temperature ingredients so the batter mixes smoothly and the muffins rise evenly.
- Do not overmix once the flour is added, or the muffins can turn dense.
