Freshly baked chocolate chip muffins with melted chocolate, cooling on a rack

Ingredients

  • 150 g (1 1/4 cups) flour
  • 1 tsp baking powder
  • 100 g (1/2 cup) sugar
  • 1/4 tsp salt
  • 70 ml (1/4 cup + 1 tbsp) milk
  • 1 egg
  • 30 g (2 tbsp) chocolate chips
  • Vanilla, to taste
  • 60 g (1/4 cup) butter

Instructions

  1. Cream the butter with the sugar (all ingredients at room temperature), then add the egg, milk, salt and vanilla.
  2. Sift in the flour and baking powder, mix the batter and fold in the chocolate (or nuts, dried fruit, etc.).
  3. Spoon into muffin cups and bake at 180°C (350°F) for 30 minutes – keep an eye on your oven.

Tips

  • Use room-temperature ingredients so the batter mixes smoothly and the muffins rise evenly.
  • Do not overmix once the flour is added, or the muffins can turn dense.
