Soft, golden syrniki with a surprise inside — a slice of sweet banana and a touch of melting chocolate — make an ordinary morning feel special. The cottage cheese keeps them tender and protein-rich, while the banana filling adds natural sweetness in every bite. They are simple to shape, quick to fry, and best served warm.

Ingredients
- 200 g (7 oz) firm cottage cheese (block-style)
- 1 large egg
- Sweetener to taste
- 1/2 banana, sliced into rounds
- 40 g (1.4 oz) dark chocolate
- 30 g (about 3 tbsp) rice flour, plus 15 g (about 1 1/2 tbsp) for dusting
Instructions
- Mash the cottage cheese with the egg, sweetener, and rice flour until smooth.
- Flatten a spoonful of the cheese mixture, place a banana slice in the center, and cover with more mixture, sealing the banana completely inside.
- Dust a board with flour and shape neat round pancakes, lightly dredging each in flour.
- Pan-fry in a little oil over low heat, covered, for about 5 minutes per side.
- Place a piece of chocolate on each hot pancake, cover for 10 to 15 seconds, then spread the melted chocolate over the top.
Tips
- Use firm, well-drained cottage cheese so the mixture holds its shape and does not stick.
