Crisp on the outside, soft and creamy inside, and hiding a molten chocolate heart, these chocolate-filled syrniki turn simple cottage cheese into a truly special treat. They are wonderful for a slow weekend breakfast or a cozy dessert, especially alongside other cottage cheese favorites like baked cottage cheese tartlets and chocolate-glazed cottage cheese bars. Serve them warm, while the chocolate is still melting.

Ingredients
- 360 g (2 x 180 g packs / about 1.6 cups) dry cottage cheese or quark
- 1 egg
- 50 g (1/4 cup + 2 tbsp) all-purpose flour, plus extra for dusting
- 10 g (2 tsp) sugar
- 10 squares of chocolate (dark or milk)
Instructions
- Mix the cottage cheese, egg, flour, and sugar into a smooth, pliable dough.
- Form small balls; press one chocolate square into the center of each and seal the dough around it. Roll each in flour.
- Heat a skillet with just a drop of oil over medium-low heat.
- Fry the syrniki on both sides until golden and crisp.
- Serve warm so the chocolate center is molten, with berries or sour cream.
Tips
- Use dry cottage cheese for the best texture; if yours is wet, drain it well first.
- Keep the heat medium-low so the outside turns golden without burning before the chocolate melts.
