Ingredients
- 2 medium zucchini (about 600 g / 1.3 lb)
- 50 g (1.8 oz / about 1/2 cup) breadcrumbs
- 50 g (1.8 oz / about 1/2 cup) grated Parmesan
- 150 g (5.3 oz) mozzarella, sliced
- 200 g (7 oz / about 3/4 cup) tomato sauce
- 150 g (5.3 oz) ham, sliced
- Olive oil, for greasing
- Salt, to taste
Instructions
- Preheat the oven to 200 C (400 F). Mix the breadcrumbs with the grated Parmesan.
- Slice the zucchini lengthwise into thin strips, skipping the seedy core.
- Grease a baking dish with oil and layer: zucchini, tomato sauce, ham, mozzarella, then the Parmesan breadcrumbs. Repeat until the ingredients run out.
- Finish with a layer of zucchini topped with the cheese-crumb mixture. Drizzle lightly with oil and sprinkle with a little salt.
- Bake for about 25 minutes until golden on top. Let cool slightly before serving.
Tips
- Slice the zucchini as evenly as you can so every layer cooks at the same rate and the top browns evenly.
- For extra flavor, season the tomato sauce well and add a pinch of dried herbs, or see Allrecipes for more baked casserole ideas.
- Let the casserole rest for 5-10 minutes before slicing so the layers hold together nicely.
