Ingredients
- 2 zucchini
- 2 processed cheese portions (about 180 g / 6.5 oz)
- 1 carrot
- 1 onion
- 2 garlic cloves
- Fresh dill, to taste
- Salt and pepper, to taste
- Vegetable oil, for frying
Instructions
- Fry the chopped onion in heated vegetable oil for 2 minutes.
- Add the grated carrot and fry 2 more minutes.
- Add the chopped zucchini, season with salt and pepper and fry 2 minutes.
- Cover with a lid and simmer about 10 minutes, stirring occasionally.
- Let cool, then blend everything with the processed cheese, garlic and dill until smooth.
Tips
- Let the vegetables cool before blending, so the spread stays thick and creamy rather than runny.
- Chill the finished spread for 30 minutes — the flavors deepen and it spreads even better.
