Ingredients
- 200 g (7 oz) cottage cheese
- 2 eggs
- 200 g (7 oz / about 1 2/3 cups) all-purpose flour
- Sweetener, to taste
- 1 tsp baking powder
- Fresh berries of your choice
- 1-2 tsp cornstarch
Instructions
- Combine the cottage cheese, eggs, flour, sweetener, and baking powder; knead into a soft dough and let it rest for 10-15 minutes.
- Chop the berries, toss with cornstarch, and sweeten to taste.
- Shape the dough into buns with a hollow in the middle and fill each with the berry mixture.
- Bake at 180 C (350 F) for 20-25 minutes until golden.
Tips
- Tossing the berries in cornstarch keeps the filling thick and prevents soggy buns.
- Do not overfill the hollows; a little filling goes a long way, and see Serious Eats for more baking technique ideas.
- Serve warm or at room temperature, dusted with a little powdered sugar if you like.
