This stuffed baguette is a golden, cheesy weeknight winner: crisp bread filled with juicy chicken, sweet peppers, and mushrooms, all bound together with melted cheese and garlic. It comes together quickly, slices beautifully, and disappears fast at the table, making it perfect for busy evenings or a casual dinner with friends.

Ingredients
- 1 baguette
- 300 g (10.5 oz) chicken breast fillet
- 1 onion, chopped
- 1 bell pepper, chopped
- 200 g (7 oz) mushrooms, sliced
- 100 g (3.5 oz) semi-hard cheese, grated
- 3 tbsp mayonnaise or sour cream
- 2 garlic cloves, minced
- Salt, black pepper, and chicken seasoning, to taste
Instructions
- Saute the onion, add the chicken fillet and cook through, then set aside. Saute the bell pepper and the mushrooms separately.
- Combine everything with the grated cheese, mayonnaise, and garlic; mix well.
- Slice the baguette lengthwise, hollow out the soft crumb, and fill with the chicken mixture.
- Bake at 180 C (350 F) for 7-10 minutes until the cheese melts.
Tips
- Do not overfill the baguette: a generous but even layer melts better and slices more neatly.
- For extra crunch, brush the outside lightly with oil before baking and serve straight from the oven.
- Swap the mayonnaise for sour cream for a lighter, tangier filling.
