This single-serve oat pancake is soft, lightly sweet, and studded with grated apple, with cottage cheese keeping it tender and protein-rich. It cooks in minutes in an air fryer or skillet, and is lovely topped with Greek yogurt and fresh berries. It is a wholesome, cozy breakfast that feels like a treat.

Ingredients
- 100 g (3.5 oz) cottage cheese
- 1 egg
- Sweetener, to taste
- Salt, to taste
- 1 tbsp (10 g / 0.35 oz) ground rolled oats
- 5 g (1 tsp) psyllium husk (optional; if omitted, use 15 g of oats)
- 1/2 tsp baking powder (scant)
- 35 g (1.2 oz / 2 1/2 tbsp) milk
- 1 small apple
- Greek yogurt and berries or fruit, to serve
Instructions
- Peel and grate the apple, then mix it with all the other ingredients.

- Spread with Greek yogurt mixed with sweetener and top with your favorite berries or fruit.
Tips
- Grate the apple finely so the pancake cooks evenly.
- Flip only once, when the first side is set and golden.
- Serve warm with yogurt and berries for the best texture.
