This chocolate overnight chia pudding is rich, creamy, and studded with oats for a breakfast that feels like dessert. A glossy cherry compote on top adds a tart-sweet finish that makes mornings special. Prep it the night before and wake up to a wholesome, ready-to-eat treat.

Ingredients
- 40 g (1/3 cup) rolled oats
- 20 g (2 tbsp) chia seeds
- 10 g (1 tbsp) cocoa powder
- 140 ml (1/2 cup + 1 tbsp) milk
- Sweetener to taste
- 80 g (1/2 cup) frozen cherries
- 7 g (1 tbsp) cornstarch
- 50 ml (3 tbsp + 1 tsp) water
Instructions
- Combine the oats, chia seeds, cocoa powder and milk. Add sweetener, stir well and refrigerate for at least 2 hours (overnight is best).
- For the cherry compote, place the frozen cherries in a small saucepan with a little water and sweetener. Bring to a gentle boil over low heat.
- Whisk the cornstarch into the 50 ml of water, pour into the bubbling cherries and stir until the compote turns glossy and thick.
- Cool the compote, spoon it over the set pudding and serve.
Tips
- Stir the pudding well after the first 10 minutes so the chia seeds do not clump.
- Use any milk you like; thicker milk gives a richer, creamier pudding.
- The compote keeps in the fridge for several days, so make extra for yogurt or oatmeal.
