These juicy chopped chicken cutlets are crisp on the outside, tender inside, and loaded with melted cheese, fresh herbs, and garlic. They come together in one skillet in under 30 minutes, making them a weeknight hero. Serve them hot with a fresh salad, mashed potatoes, or your favorite dipping sauce.

Ingredients
- 500 g (1.1 lb) chicken breast, finely diced
- 1 egg
- 3 tbsp sour cream
- 1-2 garlic cloves, pressed
- 3 tbsp whole-grain rice flour
- 80 g (3 oz) hard cheese, coarsely grated
- Fresh herbs, salt, pepper and spices to taste
Instructions
- Dice the chicken breast into small cubes.
- Add the egg, sour cream, salt and spices to the chicken and mix.
- Chop the herbs and stir them in along with the pressed garlic, grated cheese and rice flour.
- Spoon the mixture onto a hot oiled skillet and pan-fry until golden on both sides.
- Return all the cutlets to the pan, add a splash of water, cover and simmer over low heat for 10 minutes. Serve hot.
Tips
- Dice the chicken as evenly as you can so all the cutlets cook at the same rate.
- Keep the skillet over medium heat so the cheese melts without burning the coating.
- Make a double batch for meal prep: cooled cutlets keep well in the fridge for up to 3 days and reheat nicely in a skillet.
