Ingredients
- Bread slices, for toasting
- Bacon
- Romaine or iceberg lettuce (a mix works well)
- 1 egg
- 1 chicken breast
- For the sauce: 1 tbsp Greek yogurt; 1/2 tsp mustard; Salt, pepper and dried garlic to taste; Parmesan, for sprinkling; Olive oil for cooking
Instructions
- Halve the chicken breast, season with salt and pepper, brush with olive oil and sear on a hot grill pan 8-10 minutes until cooked through.
- Mix all the sauce ingredients together.
- Toast the bread, then layer the sauce, lettuce, sliced chicken, bacon and fried egg. Shower with Parmesan and close the sandwich.
Tips
- Let the chicken rest for a few minutes before slicing so it stays juicy.
- Toast the bread well so it holds up to the creamy sauce without going soggy.
