Potato blini rolls with green onion, rolled and served on a plate

Ingredients

  • 400 g (about 3 medium) potatoes
  • 150 g (1 1/4 cups) flour
  • 2 eggs
  • 300 ml (1 1/4 cups) milk
  • 1/2 tsp salt
  • Green onions, chopped

Instructions

  1. Boil the potatoes and mash smooth.
  2. Stir in the flour, eggs, milk, and salt until well combined.
  3. Ladle onto a skillet and shape into a thin pancake with the ladle.
  4. Sprinkle with green onion and cook slowly on both sides.
  5. Roll up while hot.

Tips

Mash the potatoes until completely smooth for a lump-free batter. Cook slowly over gentle heat so the blini stay soft and do not brown too fast. For another easy breakfast, try our Apple Oat Fritters, and see Allrecipes for more pancake ideas.
