Ingredients
- 2 eggs
- 2 tsp sugar
- 1 tsp salt
- 400 ml (1 2/3 cups) warm milk
- 1 tsp baking powder
- 250 g (2 cups) flour
- 2 tbsp vegetable oil
- Fresh herbs, to taste
- 150 g (1 1/2 cups) grated cheese
Instructions
- Whisk the eggs with sugar and salt, then pour in the warm milk.
- Sift the flour with baking powder into the mixture and stir smooth.
- Fold in the chopped herbs, oil, and grated cheese, then cook the blini in a skillet. Lightly oil the pan before the first one.
Tips
- Use warm, not hot, milk so the batter stays smooth and the cheese melts evenly as the blini cook.
- Keep the heat at medium so the blini turn golden without burning the cheese, and keep finished ones warm under a clean towel.
