This savory jellied mince pie is the ultimate no-fuss bake: a light kefir batter poured over a hearty filling, then baked until golden and tender. It is perfect for using up leftovers, works with almost any filling, and slices beautifully warm or at room temperature, much like these Crustless Rice Pies with Meat Filling. Serve it for dinner with a simple salad, or pack it for lunch the next day.

Ingredients
- 300 ml (1 1/4 cups) kefir
- 250 g (2 cups) flour
- 3 eggs
- 1/2 tsp salt
- 2 tsp sugar
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 50 ml (3 tbsp) oil
- 150 g (5 oz) ground meat (or any filling — leftovers with buckwheat, onion, and carrot work great)
Instructions
- Whisk the kefir with eggs, salt, sugar, soda, oil, baking powder, and flour.
- Use any filling you like.
- Grease the pan for easy release. Bake at 180 C (350 F) for about 45 minutes.
Tips
- Grease the pan well and line the base if needed, so the tender pie releases cleanly.
- Let the pie rest for 10 minutes before slicing, so the crumb sets and the slices hold their shape.
