Ingredients
- 280 g (2 1/4 cups) wheat flour
- 280 g (1 1/4 cups) cottage cheese
- 3 eggs
- 150 g (3/4 cup) sugar
- 150 g (10 tbsp) butter, softened
- 10 g (2 tsp) vanilla sugar
- 12 g (1 tbsp) baking powder
- Pinch of salt
- 100-150 g (about 1 cup) black currants (the recipe title says apple, but berries work beautifully)
Instructions
- Cream the soft butter with the sugar and salt.
- Add the cottage cheese and eggs; mix.
- Sift in the flour with vanilla and baking powder; stir.
- Fold in the berries and fill the molds (lightly oiled).
- Bake at 180 C (350 F) for 50-60 minutes.
Tips
- Use room-temperature butter and eggs for the smoothest, most even batter.
- Fold the berries in gently so they stay whole and do not tint the batter.
