These flourless coconut cookies prove that three ingredients are all you need for a truly satisfying treat. Shredded coconut, eggs, and a little sugar bake into golden, chewy cookies with crisp edges and a rich coconut flavor. Like our Coconut Cottage Cheese Cookies, they are naturally gluten-free and wonderfully simple — perfect with a cup of tea or coffee.

Ingredients
- 2 eggs
- 70 g sugar
- 100 g shredded coconut
Instructions
- Combine all ingredients and mix well.
- Drop heaped tablespoons (about 2/3 of a spoon each) onto a parchment-lined tray.
- Bake at 180°C (350°F) for 15-17 minutes until lightly golden.
Tips
- Drop heaped tablespoons about 2/3 of a spoon each and leave space between the cookies — they spread a little as they bake.
- Watch the cookies closely in the last few minutes; they go from lightly golden to over-browned fast. Allrecipes has a good guide to cookie baking times.
- Let the cookies cool on the tray for a few minutes before moving them — they firm up as they cool.
