This egg and green onion pie is the kind of easy weeknight dinner that feels like comfort food: a soft, golden kefir batter wrapped around a savory filling of chopped eggs and fresh green onions. It bakes up tender and sliceable, perfect for a family supper with a simple salad on the side. Like our Savory Jellied Mince Pie, it uses a simple pour-over batter, so there is no rolling or fuss — just mix, layer, and bake.

Ingredients
- 200 ml kefir
- 2 eggs
- 1 tbsp vegetable oil
- Salt to taste
- 160 g flour
- 1 tsp baking powder
- For the filling: 1 bunch green onions, chopped
- 3 eggs, hard-boiled and chopped
Instructions
- Mix the kefir, eggs, oil, salt, flour, and baking powder into a smooth batter.
- Boil the eggs for the filling, then chop finely with the green onions.
- Line a pan with parchment, spread half the batter, add the filling, and cover with the remaining batter.
- Bake at 180°C (350°F) for 30-40 minutes. Test doneness with a skewer.
Tips
- Chop the green onions and hard-boiled eggs finely so the filling spreads evenly and every slice holds together.
- Line the pan with parchment so the pie lifts out easily for clean, neat slices.
- Test doneness with a skewer — it should come out clean from the center. Serious Eats has a helpful guide to testing baked dishes for doneness.
