This cheeseburger pie is everything you love about a burger, baked into a golden, flaky pie. Juicy seasoned ground meat, tangy pickles, ketchup and mustard, and layers of melty mozzarella and processed cheese come together under a sesame-topped pastry lid. It slices like a pie, eats like a burger, and — like our Layered Tortilla Beef Bake — is a weeknight dinner the whole table will ask for again.

Ingredients
- 500 g yeast puff pastry
- 500 g ground meat (pork and beef mix)
- 1 red onion, sliced
- Ketchup and mustard
- Pickles, sliced
- 2 tomatoes, sliced
- Mozzarella, sliced
- Processed cheese slices
- 1 egg yolk and sesame seeds for topping
- Salt and black pepper
Instructions
- Roll out the dough (keep the bottom layer slightly thicker). Spread the raw seasoned ground meat in a baking pan.
- Layer: red onion, ketchup, pickles, tomatoes, mozzarella, processed cheese.
- Cover with the second dough layer and pinch the edges sealed.
- Brush with egg yolk and sprinkle with sesame seeds.
- Bake at 200°C (400°F) for about 30 minutes until deep golden (20 minutes is enough if the meat was pre-cooked).
- Cool slightly before slicing.
Tips
- Keep the bottom pastry layer slightly thicker so it holds up to the juicy filling without going soggy.
- Let the pie rest for 10 minutes after baking so the cheese sets and the slices hold their shape. For more on handling puff pastry, see Serious Eats.
- If you pre-cook the meat, 20 minutes in the oven is enough — just bake until the crust is deep golden.
