Ingredients
- 4 potatoes
- 1 chicken or turkey fillet, diced
- 100 g cheese, grated
- 2-3 tbsp sour cream
- 100 g corn
- 1 bell pepper, diced
- Salt and black pepper
- Dried garlic and dried basil
- Butter or oil
Instructions
- Boil the potatoes, place in a baking dish, and smash lightly with a glass. Drizzle with oil or dot with butter; season with salt and pepper.
- Mix the diced chicken and bell pepper with the corn, sour cream, dried garlic, and spices.
- On each potato, layer a little grated cheese, a couple of spoonfuls of the chicken mixture, and more cheese on top.
- Bake at 200°C (400°F) for 20-25 minutes.
Tips
- Boil the potatoes until just tender — if they are overcooked, they will fall apart when you smash them.
- Grate the cheese finely so it melts evenly, and save a little to sprinkle over the top in the last few minutes for a golden finish. For more potato dinner inspiration, browse the recipes at Allrecipes.
- Swap in your favorite vegetables — mushrooms, zucchini, or cherry tomatoes all work well in the chicken mixture. For another chicken favorite, try our Homemade Chicken Pastrami.
