This chicken, potato and mushroom bake is pure comfort in a dish: golden chicken and mushrooms folded into a creamy sauce, layered over buttery mashed potatoes, and baked under a blanket of melted mozzarella. It is the kind of hearty family dinner that disappears fast — so do not be surprised if everyone asks for seconds.

Ingredients
- 2 chicken breasts, diced
- 4–5 potatoes
- 250 g mushrooms, sliced
- 1 onion, chopped
- 150 g mozzarella, grated
- 200 ml cream
- 30 g butter
- 100 ml hot milk
- Salt and black pepper to taste
Instructions
- Fry the chicken, mushrooms, and onion separately until done.
- Combine them in one pan, add the cream, and bring to a boil.
- Boil the potatoes until tender, drain, and mash with the hot milk and butter.
- Layer the mashed potatoes and the chicken-mushroom mixture in a baking dish.
- Top with grated mozzarella.
- Bake at 200°C (400°F) for 15–20 minutes, until the cheese is golden.
Tips
- Fry the chicken, mushrooms, and onion separately so each one browns properly instead of steaming.
- Mash the potatoes with hot milk for the smoothest, fluffiest layer.
- Let the bake rest for 5 minutes after it comes out of the oven so it slices neatly.
