This no-bake cherry almond cheesecake is cool, creamy, and bursting with cherry flavor — no oven required. A nut-and-date crust holds a silky cherry-almond layer that sets beautifully in the fridge. If cherries are calling your name, try our cherry chocolate trifle or our light cherry clafoutis next.

Ingredients
- For the nut crust:
- 1 handful almonds (or any nuts)
- 7-8 dates (or plump raisins)
- For the cherry layer:
- 100-120 ml cherry juice
- 200 ml almond milk
- 1 tsp agar-agar
- Sweetener to taste
Instructions
- Warm the almond milk, add the agar-agar, stir well, and boil 2 minutes.
- Add the cherry juice and sweetener; stir well.
- Press the blended nut-date mixture into molds, tamping firmly.
- Pour the cherry-almond milk over the top.
- Chill until set.
Tips
- Boil the agar-agar for the full 2 minutes so the layer sets firmly.
- Press the nut-date crust down firmly — a flat base makes the cheesecake easy to slice.
