Layers of cocoa sponge, juicy warmed cherries and silky cream-cheese cream — this cherry chocolate trifle tastes like a patisserie dessert but takes almost no effort. The sponge bakes in the microwave in six minutes, and an hour in the fridge melds everything into a spoonable, high-protein treat. Cherry lovers should also try our Cherry Clafoutis, the easiest French dessert you will ever bake.

Ingredients
For the sponge
- 120 g soft cottage cheese
- 50 g (1/3 cup) flour
- 1 egg
- 1 tbsp cocoa powder
- 3 g baking powder
- Sweetener to taste
For the filling
- 100 g (3 1/2 oz) frozen cherries
- Sweetener to taste
For the cream
- 140 g (5 oz) cream cheese
- 120 g soft cottage cheese
Instructions
- Mix the sponge ingredients and microwave for 6 minutes.
- Toss the cherries with sweetener and microwave for 40 seconds, then stir.
- Blend the cream ingredients together.
- Cut the sponge into pieces and assemble the dessert in layers: sponge – cherry – cream – sponge – cherry – cream.
- Chill in the fridge for an hour.
Tips
- Don’t overbake the sponge — six minutes in the microwave is enough; it firms up as it cools.
- Warm the cherries just until they release their juices; too long and they turn to jam. For more cherry inspiration, try our Viennese Cherry Cake.
- Chill the trifle for the full hour so the layers set and the flavors meld. Allrecipes has more make-ahead layered desserts if you catch the trifle bug.
