This shrimp pasta is bright, creamy and ready fast, with juicy shrimp, whole-grain pasta and a vivid green sauce made from spinach and feta. It is a lighter take on a creamy pasta night, much like our Baked Cream Cheese and Bacon Pasta, and for another shrimp idea, try our Shrimp Mimosa Layered Salad. Ingredients
- 50 g whole-grain pasta (dry weight)
- 50 g fetaxa or feta cheese
- 100 g shrimp, peeled
- 1 handful fresh spinach
- 1 garlic clove
- Spices: salt, black pepper, dried garlic, paprika, chili flakes
Instructions
- Cook the pasta until done.
- In a skillet, fry the shrimp together with the spinach.
- Blend the fried spinach with the garlic (fresh and dried), herbs, paprika, salt, and pepper. Add the fetaxa and a splash of water; blend until smooth.
- Spread the green sauce on a plate and arrange the pasta and shrimp on top.
Tips
- Blend the sauce with just a splash of water so it stays thick enough to coat the pasta.
- Do not overcook the shrimp — they turn pink and curl in just a couple of minutes.
- Serve at once, with the sauce spread on the plate first so every bite gets some green sauce.
