No-bake date, walnut and chocolate rolls dusted with coconut flakes

Ingredients

  • 300 g dates
  • 100 g walnuts
  • Coconut flakes for rolling
  • 100 g chocolate, melted

Instructions

  1. Soak the dates in water for 20 minutes, then remove the pits.
  2. Blend the dates with the walnuts until smooth.
  3. Divide the mixture in two. Sprinkle coconut flakes on the work surface and roll into logs.
  4. Press a groove down the center of each log and fill with the melted chocolate.
  5. Refrigerate until set. Store in the fridge.

Tips

  • Soak the dates well so they blend into a smooth, sticky paste.
  • Chill the logs until firm before slicing so the chocolate filling stays neat.
  • Store the rolls in the fridge in an airtight container for up to a week.
