Ingredients
- 500 g (1.1 lb) tomatoes
- 1 red onion, thinly sliced
- 10 g fresh dill
- 10 g fresh cilantro
- 10 g fresh parsley
- 10 g fresh basil
- 2 garlic cloves, minced
- 5 tbsp vegetable oil
- 1–2 tbsp vinegar (wine or apple)
- 1 tbsp honey
- 1/2 tsp sweet paprika
- Hot pepper, to taste
- Salt, to taste
Instructions
- Make the dressing: whisk the oil, vinegar, honey, paprika, hot pepper, and salt until emulsified.
- In a salad bowl, combine the roughly chopped tomatoes, shredded herbs, garlic, and red onion.
- Pour over the dressing and toss gently. Rest 10 minutes before serving.
Tips
- Use ripe, in-season tomatoes — this salad is only as good as the tomatoes you start with.
- Chop the herbs just before mixing so they stay bright and fragrant.
- For a milder onion bite, soak the sliced red onion in cold water for 10 minutes before adding it to the bowl.
