This fitness layered chicken salad is meal prep that actually excites you. Tender chicken, crisp lettuce, juicy tomato, and hard-boiled egg are stacked in pretty layers with creamy Greek yogurt and a shower of grated cheese — think of it as the fresh, no-cook cousin of our high-protein chicken and mushroom salad. Like our super protein chicken and bean salad, it keeps you full for hours without weighing you down.

Ingredients
- 100 g (3.5 oz) chicken fillet, cooked
- 25 g (1 cup) lettuce leaves
- 70 g (2.5 oz) tomatoes, diced
- 1 egg, hard-boiled and diced
- 20 g (0.7 oz) light cheese, grated
- 120 g (1/2 cup) Greek yogurt
- Salt to taste
Instructions
- Layer in a bowl or glass: chicken fillet, a spoonful of Greek yogurt, lettuce leaves, tomato, egg, more Greek yogurt, then the grated cheese.
- For extra flavor, stir a little mustard or minced garlic into the yogurt.
Tips
- Cook the chicken just until done and slice it thin so every spoonful gets a bit of everything.
- Assemble the layers right before serving to keep the lettuce crisp.
- For reliably juicy chicken, the technique guides at Serious Eats are worth a read — and for another light lunch idea, try our refreshing egg, cucumber and radish salad.
