Thick, golden, and hiding a molten chocolate center — these fluffy pancakes turn an ordinary morning into something worth lingering over. A simple kefir batter and a piece of chocolate tucked inside each pancake are all it takes.
They cook up soft and pillowy under a lid, with the chocolate melting into a gooey surprise. If fluffy breakfasts are your love language, you will also enjoy our Japanese souffle pancakes and fluffy Japanese-style pancakes.

Ingredients
- 2 eggs
- 60 g (1/4 cup + 1 tbsp) sugar
- 220 ml (1 cup minus 1 tbsp) kefir or buttermilk
- 200 g (1 2/3 cups) all-purpose flour
- 1/2 tsp baking soda
- 1 chocolate bar, broken into pieces
- Vegetable oil, for frying
Instructions
- Beat the eggs with the sugar until light.
- Pour in the kefir and mix well.
- Sift in the flour and baking soda and stir into a thick, smooth batter.
- Lightly oil a skillet and heat it well over medium heat.
- Spoon dollops of batter onto the skillet.
- Place a piece of chocolate in the center of each pancake and cover with a little more batter.
- Cover with a lid and cook about 3 minutes per side until beautifully golden.
Tips
- Keep the heat at medium — too hot and the outsides brown before the chocolate melts.
- Do not press the pancakes flat; a thick batter is what gives them their fluffy rise.
- Rest the batter for 5 minutes before cooking for an even softer crumb, and browse allrecipes.com for more pancake inspiration.
