Tall and fluffy baked cottage cheese casserole with a golden top, served in slices

Ingredients

  • 500 g (1.1 lb) cottage cheese
  • 150 g (3/4 cup) sugar
  • 3 eggs
  • 3-4 tbsp all-purpose flour
  • 1 tbsp cornstarch
  • 5 g (1 tsp) baking powder
  • 5 g (1 tsp) vanilla sugar
  • Handful of raisins (optional)

Instructions

  1. Whisk the eggs with the sugar until the sugar dissolves.
  2. Add the cottage cheese and stir in. Then add all remaining ingredients and mix to a sour-cream consistency.
  3. Butter a baking dish and pour in the batter.
  4. Bake in a preheated oven at 180°C (350°F) for 50 minutes. Do NOT open the oven during this time!
  5. If it has not browned enough, raise to 200°C (400°F) for 5 more minutes.
  6. Serve with sour cream, berry jam, or condensed milk.

Tips

Do not open the oven. The casserole rises on steam, so opening the door will make it fall. Trust the timer and peek only through the oven window.

Use dry cottage cheese. If your cottage cheese is watery, drain it in a sieve first so the crumb sets tall and fluffy. For a fruity twist, try our cottage cheese casserole with pear.

Let it rest before slicing. Wait 10-15 minutes after baking — the casserole firms up and slices cleanly. Find more baking inspiration at allrecipes.com.
