Ingredients
- 200 g (7 oz) mozzarella
- 280 g (10 oz) tomatoes
- 30 g (1 oz) onion
- 10 g (2 tsp) olive oil
- Salt and pepper to taste
- Fresh or dried thyme
Instructions
- Preheat the oven to 200 C (400 F).
- Slice the tomatoes and mozzarella into rounds about 0.7 cm (1/4 inch) thick.
- Grease a baking dish with olive oil and arrange the tomato and mozzarella slices, alternating. Season with salt.
- Chop the onion very finely, mix with the remaining oil and pepper, and spoon over the tomatoes and cheese.
- Bake for 20–25 minutes until bubbly and lightly golden.
- Sprinkle with thyme before serving (if using dried thyme, add it to the onion-oil mixture before baking).
Tips
- Choose ripe but firm tomatoes so the slices hold their shape while baking.
- Slice the mozzarella and tomatoes to the same thickness for even cooking.
- Serve immediately while the cheese is still bubbly — it firms up as it cools.
