These chicken rolls with cheese, tomato and basil are a weeknight hero: juicy chicken wrapped around melting cheese, braised with tomatoes, garlic and dried basil until irresistibly tender. They taste like a cozy Italian-inspired dinner but come together with simple ingredients — much like our stuffed chicken breast. Serve them hot, straight from the skillet, and watch them disappear.
Ingredients
- 4 chicken breast fillets (or thighs)
- 100 g (3.5 oz) cheese, sliced
- 2 tomatoes, sliced
- 2 garlic cloves, minced
- Dried basil to taste
- Salt to taste
- Toothpicks
- Splash of water or broth
Instructions
- Slice the chicken into cutlets, pound thin, and season with salt.
- Place a slice of cheese on each piece, roll up, and secure with a toothpick.
- Sear the rolls on both sides for a couple of minutes until golden.
- Add the sliced tomatoes, a splash of water or broth, dried basil, and garlic. Season with salt.
- Cover and braise 15-20 minutes.
- Serve hot so the meat stays juicy.
Tips
Pound the chicken evenly so the rolls cook through at the same rate — this trick also works beautifully in our crispy chicken schnitzel. For more chicken technique guides, visit Serious Eats.
Swap in mozzarella for an extra-gooey center, or add a pinch of chili flakes for heat. Love rolled dinners? Try our bacon-wrapped chicken and potato roll next.
