These mushroom-stuffed meat nests are the kind of dinner that makes everyone come back for seconds. Juicy seasoned ground meat is shaped into little nests, filled with golden sautéed mushrooms, and finished with a spoonful of tangy sour cream under a blanket of melted cheese. If you enjoy cozy baked dinners like our baked pork with mushrooms and cheese, this recipe deserves a spot in your weeknight rotation.

Mushroom-stuffed meat nests filled with golden mushrooms, sour cream and melted cheese

Ingredients

  • 450 g (1 lb) ground meat
  • 1 egg
  • 1 onion, finely chopped
  • 200 g (7 oz) button mushrooms, chopped
  • 4 tbsp sour cream
  • 120 g (4.2 oz) hard cheese, grated
  • Fresh herbs, chopped
  • Paprika, dried garlic, salt, and pepper to taste
  • Vegetable oil and butter for frying

Instructions

1. Mix the egg, salt, paprika, and dried garlic into the ground meat. In a skillet over a mix of butter and vegetable oil, sauté the onion, then add the mushrooms, salt, and pepper. Cook until golden, stir in the minced garlic, and take off the heat.

2. Shape the meat mixture into balls, then press each into a nest shape and arrange them on a baking sheet.

3. Stir the chopped herbs into the sour cream. Fill each nest with the mushroom mixture, spoon the sour cream over the top, and sprinkle with grated cheese.

4. Bake at 180°C (350°F) for 25 minutes, until the cheese is melted and golden. For more ground-meat inspiration, try our cheese-stuffed meat cutlets or tender meatballs with vegetables in tomato sauce, and see Allrecipes for more baked dinner ideas.

Tips

  • Wet your hands with cold water before shaping the nests — the mixture won’t stick and the nests will hold their shape better.
  • Don’t overcrowd the mushrooms in the skillet; cook them in a single layer so they brown instead of steaming.
  • Swap the hard cheese for mozzarella if you prefer an extra-gooey topping, and add a pinch of smoked paprika for extra depth.
